Easy lemon mousse

Takes 20 mins to make, serves 10

Ingredients:

    4pt Whipping Cream
    8 Lemons
    200g Castor sugar
Method:
1. Place the cream and the sugar in a pan and boil until it starts to thicken.
2. Remove all the zest and juice from the lemons and leave to one side.
3. When the cream has thickened leave to cool down in a cold place until it is cool enough.
4. Whisk in the lemon juice and zest and pipe into the wine glasses leaving 1/2cm gap at the top.
5. When you have finished place them in the freezer for 10 mins and then place in the fridge until you need them.
6. Garnish with a bit of lemon zest on top and shortbread biscuits on the side.
